Logging extra hours in the brew lab to hone in the roast profiles and unleash flavor potential for some new coffees. The first is a peaberry from our direct trade friends at Finca Spirit Mountain in the DR.
Peaberry is actually an anomaly in coffee. Typically a coffee cherry contains two coffee beans but randomly some cherries will have a smaller round single bean. These peaberries are screened out after harvest. The smaller, denser beans create an amplified sweetness in the cup.
